Healthy Eating

In an effort to live a sustainable life, including a sustainable food practice, we are gathering together what we consider to be healthy recipes ... healthy both for our bodies and for our world.

The need for a different kind of eating became abundantly clear to Betsy.  She shares her story below.

"For so many years, I didn't give much thought as to what went into my stomach. I just ate what was easy and available, without thinking overly much about how good it was for me. That all changed when I got type 1 diabetes. Suddenly food was much more tied to my overall health. I drastically changed the way that I ate, and over the years, I have noticed a few things about that. One is that so much more than my diabetes is in better shape---my whole self is in better shape. All my systems work better. I have more energy. I am so much more mindful of my food, and where it comes from. One of my goals is to eat as little processed food as possible, and to try to eat locally as much as possible. Some of the recipes that I have posted have become staples of mine as I attempt to eat a gluten-free, dairy-free, sugar-free diet. I hope that some of them will inspire others to think deeply about the food they eat."
